The Winehouse

The Quinta da Plansel (Plansel Estate) is situated in the Northeast Alentejo, around 100 km from Lisbon and part of the CDO (Controlled Denomination of Origin) of ÉVORA.
 The winery currently produces between 450,000 and 500,000 litres of wine, as well as providing services to other winemakers.
 The majority of the harvest is carried out using a modern machine which includes a stemmer, only during the night, to ensure grape quality, with the inlet temperature of said grapes standing at around 15º C. The grapes intended for higher quality wines like reserves, superior and selected vintage are hand-picked and at night they are kept in a chilling chamber so that the temperature will fall to 10º C.
 The winery also has a chilling chamber built to improve fermentation control of white wines. Red wines ferment in a separate sector in stainless steel vats with capacities of between 8,000 and 15,000 Kg at a temperature of 25/27o. When fermenting red wines, we have three different systems:
     1) Vinimatic (horizontal rotating deposits)
     2) Press (made of stainless steel)
     3) Ganimede
 All our wines ferment separately so that there is greater harmony between the various grape varieties.
 During fermentation the wines are controlled in the laboratory every day to allow thorough quality control. After fermentation, the wines age and mature, depending on the need of each one, in stainless steel tanks or French and American oak barrels.
